I guess "fritters" are a southern thing?!?  I don't know, okay?  These things are just really stinking good and maybe they're not even actually fritters because someone recently told me fritters have corn in them?

I know things about cooking, apparently.

Technicalities aside, you need to make these.  I've been obsessed with them as my breakfast prep for a solid 3 weeks now, and I don't see a slow-down coming any time soon!  That being said, I can for sure say they also store really well for up to a week in the fridge and hold together for on-the-go munching. :)

Sweet Pork Breakfast Fritters

Prep time: 15 minutes   Cook time: 20 minutes   Total time: 35 minutes

Yield: 5 servings (about 20 fritters)

  1. Shred sweet potato with a cheese grater or mandolin with julienne attachment and add to a large mixing bowl.  Finely dice onion and mix in with sweet potato shreds.
  2. Add spices and ground pork to the mixing bowl and incorporate all ingredients until evenly mixed and patties can be formed without falling apart.  Depending on size of onion and sweet potato, there may some extra pieces that to do not "fit" into the patties.  Don't toss them!
  3. In a large pan, spread some cooking oil of choice (I use coconut oil) and add about 5 patties to cook until brown all the way through.  If there were extra onions/potatoes that did not fit into patties, leave them in the pan as you cook all the patties.
  4. Cook all patties on the pan, removing when one batch is done and adding more until all are cooked.  Remove little bits of extra veggies to serve or munch on with the patties.  Enjoy fresh or as a great meal prep option!
