Paleo Chicken Fried Steak… how about Turkey?

I don’t know why things are called “chicken fried,” but you can basically chicken fry anything.

Including wild turkey, which is what my dad happened to shoot a few weeks ago.

I was then tasked with cooking it for the family and damn it, I wanted to try to fry that thing.

This is a DELICIOUS recipe and it’s so fun to make!

Give it a try with either chicken, turkey, steak, or whatever meat you’re trying to fry. In a healthy way, of course.

Ingredients

  1. Slice the turkey breast (or steak) into 1/2 inch thick cutlets.

  2. Whisk the eggs in a small mixing bowl. In a second mixing bowl, combine the spices and potato starch. In a third mixing bowl, break the Jilz Crackers into large crumbs.

  3. Begin melting a spoonful of your cooking grease in a large pan, like a cast iron skillet.

  4. Take each turkey cutlet and dredge it through the potato starch, then the eggs, and then the crackers. Make sure to cover it fully at each station.

  5. Place the cutlets in the warm cooking fat on the pan once coated and cook on medium heat until you begin to see the meat whiten on the bottom. Flip each piece over and cook it on the other side until this whiteness appears, too. This will take around 10 minutes.

  6. Before removing from the pan, cut into a thicker piece to make sure that it’s cooked thoroughly, with no pink in the middle.

  7. Remove from the pan and serve with your favorite country fixings! I suggest some Tex-Mex Broccoli Slaw and Dairy-Free Mashed Potatoes.

2lbs turkey breast (or steak!)

1 box Jilz Crackers (or other gluten-free crackers)

3 eggs

1 cup potato starch

1/4 cup to 1/2 cup cooking oil (I recommend bacon grease)

1 tsp sea salt

1 tsp black pepper

2 tsp garlic powder

1 Tbsp Cajun spice mix

Cayenne pepper, to taste (we use around 1 tsp)
