These are SO easy and delicious - plus there's no sugar other than that from the dates (still high sugar, but I tried to leave out any excess) and you can roll these babies in shredded coconut to make them look like cottontails for Easter.
Lemon Macaroons

Yield: About 20 macaroons

Ingredients
1. Add Brazil nuts and pistachios to a food processor or high-power blender (like a Vitamix) and pulse until they are broken into a fine meal.
2. Add dates, salt and lemon juice next, pulsing again until a dough forms. Add in water after this is well-mixed, if needed.
3. Mold dough into 1 1/2-inch balls. Roll each ball in the shredded coconut or other desired toppings, then place on a plate to serve. If not serving immediately, store in fridge so they retain their shape.
1 cup Brazil nuts
1 cup pistachios, shelled
8 medjool dates
Juice of 1 lemon (can adjust to taste)
Pinch of sea salt
2 tbsp water, if needed for texture
Optional: Shredded coconut or other fun toppings to roll them in!
