Game Meat Jambalaya (as a stir-fry)

Okay, I got a little annoying with the recipe name.

But, to be fair, it’s perfectly accurate.

I was craving the flavors of jambalaya the other day and had some thawed game meat sausage that needed to be used… while also feeling like I didn’t want to figure out a roux recipe for myself.

Luckily, I got to review Jennifer Robins’ Affordable Paleo Cooking with Your Instant Pot… and I’ve made her jambalaya recipe more than any other in there.

She actually hacked how to make gumbo without roux, so I figured I’d steal that for a less-brothy jambalaya.

Here we are.

My boyfriend’s mind was blown when we say down and tasted it.

I’ll take that as a win!

 Game Meat Jambalaya Stir-Fry

Prep time: 10 minutes Cook time: 15-20 minutes

Yield: 3-4 servings

Ingredients

  1. If you’re making regular (grain-based) rice, start that process first. Follow your package’s instructions. If you’re making cauliflower rice, just shave down the cauliflower florets. You’ll begin cooking it later.

  2. While grain-based rice is being brought to a boil, prepare all veggies the way they’re listed on the ingredients list and slice the sausages into bite-sized pieces.

  3. Heat cooking fat on medium heat and add minced garlic.

  4. Once garlic is aromatic and pan is warm, add the raw sausage. Cook for a few minutes and add onions when sausage first begins to brown.

  5. After onions begin to soften, add all other veggies besides the mushrooms and spinach.

  6. Sprinkle your spice blend to taste so far.

  7. Add mushrooms a few moments later, once peppers soften. Add the marinara sauce and more spices as needed.

  8. If making cauliflower rice, begin that now.

  9. Add spinach last to wilt over heat, mix all the veggies and meat together with spices, and cover the pan with a large lid. Leave it like this until the spinach is wilted (usually around a minute). Aaaaaand throw in one final spice run if you’d like some more.

  10. Use a serving spoon or ladle to scoop the jambalaya stir-fry on top of the regular on top of as much rice or cauliflower rice you’d like. Enjoy with extra Tabasco sauce but trust me, with that Thai chili pepper - you might not need it!

1 lb venison sausage

0.5 lb duck sausage

1 red bell pepper, diced

1 green bell pepper, diced

4 stalks celery, diced

1/3 of a sweet onion, diced

1 bunch green onions, chopped

1/2 cup diced baby bella mushrooms

2 cups fresh spinach leaves

2/3. cup marinara sauce of choice

Healthy cooking fat of choice - I’d recommend bacon fat or pork tallow if you can swing it, but if not, grass-fed ghee or butter are the next best!

(optional) 1 Thai chili pepper

1 batch of cauliflower rice OR

4 cups cooked rice (1 cup dry)

Seasonings - to taste

4 cloves of fresh garlic, minced
