Yes, I'll admit that this sounds gross.  But don't get your panties in a bunch!  Seriously, that's almost grosser and more annoying than dealing with a raw cow's tongue in your crock pot.  It gets itchy and ish.  So stop.  Stop it.  Did you stop?  Good.  Let's proceed.

As you'll see in the picture below, this meat is no less appealing than any other pulled meat made in the crock pot.  And the flavor?  Well, tongue is a muscle.  Literally anything called "meat" is a muscle.  So... transitive property: what does beef tongue taste like?  Beef meat.  Seriously.  That's what it tastes like.

So, let's get started, yes?

Beef Tongue Tacos

Ingredients

  1. Cut up onion and place evenly along the bottom of your crock pot/slow cooker.  Sprinkle and rub in the seasonings all over the beef tongue evenly.  Place on top of the onions and fill crock pot with just enough water to cover the meat completely.
  2. Place the lid and cook in crock pot on low for 8 hours.
  3. Toward the end of the cooking time, prepare the Soft Tortillas and any other desired toppings.  Once meat is done, remove from the crock pot and pull away the skin from the tongue and discard.  It should come off easily.  Go ahead and discard the onion and water remains as well.
  4. Take two forks and shred the meat from the inside, just as you would any other meat.  Place into the Soft Tortillas and top as you wish to serve!

1 yellow onion, cut into large slices

1 beef tongue (mine was roughly 1.5lbs)

1 tsp sea salt

1 tsp black pepper

1/2 tsp garlic powder

1/2 tsp chipotle chili powder

1/4 tsp white pepper

1 batch Soft Tortillas

Optional toppings:

1 batch Fire-in-the-Hole Pico de Gallo

1 batch Guac of Shame
