Okay let's just continue the froyo trend with these recipes lately by throwing another spin on it: STRAWBERRIES!

It doesn't help that the weather in Austin (and all of Texas) has me wanting nothing but cold stuff to try and maintain some sort of safe body temperature.  

This thing DEFINITELY hits the spot in that arena!

I wanted to use up the kefir in my fridge because I've been getting some acne on my cheeks again, which is usually a sign to me that my hormones are off.  

So I've been weaning off of dairy a bit to see if that's the issue, even though it hasn't been in the past.  

It's the only major inflammatory food I've been eating fairly regularly (in the form of kefir and yogurt) so I guess we'll see if that changes things.  

Fingers crossed I find some other issue, because I love me some kefir and cheese every now and then!

The benefits of this are numerous as far as ingredients for this goes.  

Kefir, if you can handle dairy, is a HUGE probiotic that's got much more bacteria than regular yogurt.  

The consistency of it is more drinkable, and I'm sure that's a factor as to why this recipe turns out like fluffy froyo that's like soft serve ice cream, but still somehow scoops like hard ice cream (AKA the only kind we can get in Texas because soft serve would melt immediately). 

The Marine Collagen adds juuuust another touch to that fluff, is flavorless so it doesn't mess anything up there, and gets you some prebiotic (bacteria feeding) benefits while helping out your hair, skin, joints, etc.  

The strawberries are just plain good for you with all their antioxidants and stevia has been shown to help maintain healthy blood sugar.  Yes!

4-Ingredient Strawberry Froyo

Total time: 20 minutes

Ingredients

  1. Add all ingredients to a Nutribullet and blend until smooth.
  2. Pour into your ice cream maker and run according to maker's instructions.  I love my ice cream maker because there's no salt involved and it only takes about 15 minutes to finish the ice cream!
  3. Scoop it on out and serve... or, you know, eat it all yourself. ;)

2 cups full-fat kefir

1/2 cup strawberries

1 scoop Vital Proteins Marine Collagen

1/4 tsp stevia (adjust to taste)
